Live Oak County, located in the South Texas region, was established in 1856 by the Texas Legislature. It is named after the prominent live oak trees scattered throughout the county. The county seat is George West, a city that was founded in 1913 by George Washington West, a rancher and successful entrepreneur.

Before the formation of the county, the area was initially settled by Mexican and Irish colonists in the 1700s and 1800s. It was also occupied by Native American tribes such as the Karankawas, Comanches, Lipan-Apaches, and Aranamas before the arrival of Europeans.

During the Mexican-American War, military roads were established through the area, which also served as trade routes. After Texas became a state, the area was included in the vast Nueces County, and in 1856, Live Oak County was formed out of parts of San Patricio, Bexar, and Nueces Counties.

The economy of Live Oak County has been historically driven by agriculture, with cattle ranching being the primary industry. Other significant industries include petroleum, natural gas, farming, and tourism. The county experienced an oil boom in the early 1900s, which contributed to its growth and development.

A fun fact about Live Oak County is the annual "Choke Fest," a local festival that takes place in Three Rivers, a city within the county. The festival celebrates the history and culture of the region and features live music, art exhibits, cooking contests, and other entertainment.
