Zapata County is located in the southern tip of Texas along the Rio Grande River, which borders Mexico. The county was created in 1858 and organized in 1859, with its namesake stemming from Antonio Zapata, a patriot during Texas' struggle for independence. The area has a rich history that can be traced back to its Indigenous inhabitants and Spanish explorers in the 16th century.

In the 1700s, Spanish missionaries established settlements in the area alongside the Indigenous communities, creating a Spanish colonial region known as the Nuevo Santander Province. The merging of Spanish and Indigenous cultures created the unique population and culture found in Zapata County today, known as the South Texas Border Region.

The region's ranching and farming practices were developed during the Spanish colonial period, with cattle ranching becoming a significant part of the economy. The establishment of land grants for ranching encouraged settlement and economic growth in the area.

During the Mexican-American War in the mid-1840s, Zapata County supported the Mexican cause, leading to conflicts between the United States military and its residents. Due to the county's strong cultural connection with Mexico, it remained closely tied to the country throughout the Texas Revolution and American Civil War.

At the beginning of the 20th century, oil was discovered in Zapata County, contributing to its economic prosperity. However, the construction of the Falcon International Reservoir in the 1950s displaced many residents and communities, forcing them to move to higher elevations.
